Dough Preparation:

  1. Mix together water, lukewarm milk, oil, sugar, and salt in a bowl.
  2. Add the instant yeast and stir well.
  3. Gradually incorporate the flour until you achieve a soft, non-sticky dough.
  4. Cover the bowl and let the dough rest in a warm spot for about 1 hour.

Flour Filling:

  1. Melt the butter and blend in the flour, stirring until it turns lightly golden—take care not to burn it.
  2. Add a pinch of salt to the toasted flour mixture and mix; then allow it to cool.

Assembling the Kete:

  1. Divide the risen dough into portions and roll each out to roughly the size of a dessert plate.
  2. Brush each dough sheet with butter, fold into quarters, then roll it out again and add another layer of butter.
  3. Place about a teaspoon of the toasted flour mixture onto the flattened dough and fold it into quarters once more.
  4. Brush the top with egg yolk and use a fork to create decorative lines.
  5. Lightly sprinkle some extra of the flour mixture over the dough’s surface.
  6. Bake the prepared kete in a preheated 180°C (350°F) oven until done.
  7. Serve your freshly baked kete with pleasure and enjoy its rich flavor.
